Crawfish are in short supply this season, and prices are high. That’s bad news. Folks in Acadiana love to boil mudbugs this time of year. There is good news, though. Shrimp and crabs are plentiful this time of year, and a number of local grocers are havig specials. Don’t resort to buying imported crawfish. We all know it’s of inferior quality. Forty percent of America’s shrimp come from the Gulf of Mexico. If you can’t have a crawfish boil without taking out a second mortgage, how about boiling some shrimp and crabs? Crawfish may be in short supply, but we still have some of the world’s best seafood right here in Louisiana.
