Lafayette Baker Delivers Sweet and Sensitive Treats

This week’s featured business on Lundi Love is Dani Cakes Bakery. Dani Cakes Bakery is a local bakery that is based in Youngsville but actually exists inside the internet universe. Owner Danielle Bidstrup does not have a storefront yet. This online bakery specializes in what she calls “sweet and sensitive” treats. All of her goodies are prepared without nuts, soy, eggs, dairy or gluten. Anyone suffering any type of food allergy understands how difficult it can be to find a delicious dessert alternative. Sometimes gluten-free products can be grainy, hard and chewy. (Basically not delicious) Her website is very user-friendly. You place an order in and it is ready for pickup in 48 hours.

I discovered her on Instagram. I really love food photos and somehow I came across a photo of one her Gluten-free, Vegan King Cakes. And it looked really good. My daughter has been living the vegan lifestyle since her junior year of high school. It has been a challenge to finding and preparing plant-based dishes. And to add to the challenge, I also have a special diet. I do not eat gluten. It has been close to 3 years now that I have been on a gluten-free diet. A few years ago, I read an article that claimed gluten is to blame for common ailments like eczema. So as a personal science experiment, I gave up gluten. But ever since, my daughter and I have a hard time finding a satisfying dessert. (Without animal by-products, dairy or wheat, delicious dessert are hard to find)

I placed an order online for a strawberry filled king cake from Dani Cakes Bakery. It was ready in two days. She delivered to us at the Y Not Stop on Ambassador. We couldn’t wait! The cake was gooey and sweet! The best I have ever tasted since being on this gluten-free diet. We ordered another.

Dani Cakes also has other products like Gluten-free Roux, Cookies, Cakes, Cupcakes, Cinnamon Rolls, Donuts and more. This weekend, she set up a pop-bakery. This is basically when she borrows another storefront for one day. I stopped and picked up the cinnamon rolls pictured above. I also tried the beignets and donuts. Everything is so good. If you know anyone with a food allergy, please refer them to Dani Cakes Bakery. Even if you don’t have an allergy, you will enjoy these treats.
